Breakfast Casserole

  • 1 lb. pork sausage (can substitute ham or bacon)
  • 1 box croutons (seasoned is good)
  • 3/4 lb. grated cheddar cheese
  • 2 cups milk
  • 8 eggs (can use more eggs, but don't increase milk)

Spread croutons in the bottom of a 9 X 13 glass baking pan. Brown meat (drain, if necessary) and layer over the croutons. Separately, beat eggs, add milk to eggs, and pour mixture over the meat. Top with sprinkled cheese.

Cover and refrigerate over-night. With cover on, bake at 325 deg. for 1/2 hour. Remove cover and bake 1/2 hour.




Poppy Seed Chicken

  • 6 cans of boned Chicken (Swanson)
  • 2 cans of cream of mushroom soup
  • 1 sour cream - 8 oz.
  • "Ritz" crackers (or equal) as required
  • butter as required (melted or liquid)
  • poppy seeds as top garnish

Mix together on top of stove until heated. Put in casserole dish. Then crumble "Ritz" crackers over the mizture until covered. Drizzle butter lightly over the topping and sprinkle on poppy seeds.

Bake at 350 deg., uncovered, until bubbly.
